In no order of preference, yadda yadda, these are the extensions I'm currently running on my N95 8Gb.
The Functional:
- Conversation - threaded SMS (think GMail vs email)
- Opera Mini - pwns the native browser; just like reg. Opera, resizes web pages brilliantly. Also supposed to shrink images before it hits your mobile so you save on bandwidth. All WIN!
- Nokia Chat (beta) - location aware chat client. Integrates with Nokia's "Lifestreaming" service, OVI.
- Twibble - location aware twitter client, can attach your position using the phone's built-in GPS.
- Jaiku mobile client - yetAnotherMicrobloggingService, but this client is damn powerful - can even connect to local peers via bluetooth.
- YouTube beta client - run YouTube as an App to get full-screen vids, streamlined search and more.
- GMail client
- GooSync - sync your phone's calendar with your Google Calender
